Greek Salmon Salad

Ingredients:

  • 2 tbsp Olive Oil

  • 1 Lemon (juiced)

  • Sea Salt & Pepper

  • 2 cans Wild Salmon (drained)

  • 1/2 head Green or Romaine Lettuce (separated into leaves and washed)

  • 1 Tomato (medium, chopped)

  • 1 Cucumber (small, thinly sliced)

  • 1/2 Avocado (sliced)

  • 1/3 cup Red Onion (sliced)

  • 1/3 cup Feta Cheese (crumbled)

  • 1 large yellow potato (cubed & baked until crispy)

Directions:

  • Preheat oven to 400 degrees F

  • Spray cubed potatoes with olive oil, sprinkle with sea salt, and bake for 15 minutes per side on the top shelf so they get crispy. You can also do these in the air fryer with the same method and they will only take about 10 min / side!

  • In a small bowl, whisk together the oil, lemon juice, salt, and pepper.

  • Arrange the remaining ingredients on a serving platter. Drizzle with the dressing and enjoy!
