Sautéed Lentils with Hummus
Servings: 2
Ingredients:
1 tbsp Extra Virgin Olive Oil
1 Red Bell Pepper (medium, cut into sticks)
2 Garlic (cloves, chopped finely)
2 tsp Ground Sumac
1/8 tsp Sea Salt
1 cup Green Lentils (cooked, drained)
1 cup Cilantro (chopped)
1 cup Hummus
Directions:
Heat a skillet over medium heat and add the oil. Add the peppers and cook for two to four minutes or until softened.
Add the garlic, sumac, and salt and continue cooking for one minute, stirring frequently.
Stir in the cooked lentils and continue to cook for one more minute. Turn off the heat and stir in the cilantro.
To serve, divide the hummus evenly between plates and top with the lentil mixture. Enjoy!
