Sautéed Lentils with Hummus

Servings: 2

Ingredients:

  • 1 tbsp Extra Virgin Olive Oil

  • 1 Red Bell Pepper (medium, cut into sticks)

  • 2 Garlic (cloves, chopped finely)

  • 2 tsp Ground Sumac

  • 1/8 tsp Sea Salt

  • 1 cup Green Lentils (cooked, drained)

  • 1 cup Cilantro (chopped)

  • 1 cup Hummus

Directions:

  • Heat a skillet over medium heat and add the oil. Add the peppers and cook for two to four minutes or until softened.

  • Add the garlic, sumac, and salt and continue cooking for one minute, stirring frequently.

  • Stir in the cooked lentils and continue to cook for one more minute. Turn off the heat and stir in the cilantro.

  • To serve, divide the hummus evenly between plates and top with the lentil mixture. Enjoy!
