Stuffed Zucchini
Servings: 3
Ingredients:
3 large zucchini (cut in half length-wise)
1lb ground turkey or extra lean ground beef
1/2 cup yellow onion (chopped)
1/2 cup of your fave tomato pasta sauce
1 tbsp minced garlic
1 jalapeno pepper (finely chopped)
2/3 cup feta cheese crumbles
1/2 cup panko crumbs
1 tbsp olive oil
Directions:
Preheat your oven to 350°.
Place a pan on the stove over medium heat and once hot, add your ground turkey or beef, along with onion and olive oil. Cook until meat is about half done and liquid has evaporated (about 8 minutes).
Drain any excess fat and transfer the ground meat and onion into a large mixing bowl.
Slice your zucchini in half length-wise and scoop out the insides. Chop the scooped-out zucchini flesh, and add to mixing bowl with your meat.
Mix in the feta cheese, garlic, pasta sauce, jalapeno, and salt & pepper into the bowl. Mix well!
Fill all 6 halves of the scooped out zucchinis with your mixture, and top with panko crumbs.
*For a gluten-free dish, swap panic bread crumbs with 1/2 cub crushed potato chips!
Place in a baking dish and cover tightly with tinfoil. Bake in the oven for 45 minutes. Allow to cool and serve!
