Brunch Platter

Ingredients:
2 whole eggs (poached or sunny side up)
Salt & pepper + any and all seasoning you like!
3-4 slices of Canadian bacon or smoked salmon
1/3 avocado
1 small potato (or 4 baby potatoes)
1.5 tbsp olive oil
1 big handful spinach
1/3 cup yellow onion (chopped)
4-5 mushrooms (thinly sliced)
Any other veggies you like and want to grill up!
Directions:
Preheat oven to 400°F
Turn your stove to medium heat and and add olive oil to a large frying pan
Chop your potato into bite size pieces, and throw into a pyrex baking dish or on to a baking sheet
Toss potatoes in a light layer of olive oil and season with salt and pepper and any other herbs you feel like
Place in the oven and bake for 30 minutes
While your potatoes are cooking, chop the rest of your veggies into small pieces
Toss veggies into the pan, season however you like, and allow them to cook for about 8 - 10 minutes
If you are cooking bacon, do so in a separate pan on medium heat
Just before the veggies are done, add spinach and shove them to the side of the pan
Crack eggs onto the pan, season, and cover with a lid. Allow to cook for about 2 minutes until the eggs reach your preferred level of doneness. You can also poach the eggs if you prefer
Arrange your Brunch Platter with crispy potato, eggs, cooked veggies, sliced avocado, and either bacon on smoked salmon. Enjoy!
