Brunch Platter

Ingredients:

  • 2 whole eggs (poached or sunny side up)

  • Salt & pepper + any and all seasoning you like!

  • 3-4 slices of Canadian bacon or smoked salmon

  • 1/3 avocado

  • 1 small potato (or 4 baby potatoes)

  • 1.5 tbsp olive oil

  • 1 big handful spinach

  • 1/3 cup yellow onion (chopped)

  • 4-5 mushrooms (thinly sliced)

  • Any other veggies you like and want to grill up!

Directions:

  • Preheat oven to 400°F

  • Turn your stove to medium heat and and add olive oil to a large frying pan

  • Chop your potato into bite size pieces, and throw into a pyrex baking dish or on to a baking sheet

  • Toss potatoes in a light layer of olive oil and season with salt and pepper and any other herbs you feel like

  • Place in the oven and bake for 30 minutes

  • While your potatoes are cooking, chop the rest of your veggies into small pieces

  • Toss veggies into the pan, season however you like, and allow them to cook for about 8 - 10 minutes

  • If you are cooking bacon, do so in a separate pan on medium heat

  • Just before the veggies are done, add spinach and shove them to the side of the pan

  • Crack eggs onto the pan, season, and cover with a lid. Allow to cook for about 2 minutes until the eggs reach your preferred level of doneness. You can also poach the eggs if you prefer

  • Arrange your Brunch Platter with crispy potato, eggs, cooked veggies, sliced avocado, and either bacon on smoked salmon. Enjoy!
