Air Fryer Sweet Potato & Egg Salad

Ingredients:

  • 1/2 Sweet Potato (large, cubed)

  • 1 tbsp Olive Oil

  • 8 Eggs

  • Sea Salt & Black Pepper

  • 4 cups Baby Spinach

  • 2/3 cup Cherry Tomatoes (halved)

  • 4 tbsp Guacamole

  • 4 tbsp Vinaigrette Dressing

Directions:

  • Preheat your air fryer to 400°F (205°C). Coat the sweet potato with olive oil. Add to the air fryer and cook for 12 to 15 minutes, or until desired crispiness, tossing halfway through.

  • Meanwhile, heat a pan over medium heat. Spray with oil. In a bowl, whisk the eggs and add them to the pan. Stir the eggs to scramble them for five minutes or until thoroughly cooked. Season with salt and pepper.

  • Divide the spinach, cherry tomatoes, potatoes, eggs, and guacamole evenly between bowls. Top w/ vinaigrette and enjoy!
