Sweet Potato Toast

Ingredients:
2 lengthwise slices of sweet potato (1 cm thick)
tomato slices
1/3 medium avocado (mashed)
2 eggs (sunny side up)
3 slices smoked salmon
1 handful spinach
Squeeze of fresh lemon
Salt and pepper
Red pepper flakes
1 tbsp olive oil
Directions:
Preheat oven to 425°F
Slice your sweet potato into thin, lengthwise slices and drizzle with olive oil
Place slices on a baking sheet or pyrex dish and bake for about 20 minutes, flipping them over halfway through
Turn your stove to medium heat and and add olive oil to a frying pan
Cook 2 eggs to your liking and season with salt, pepper, and red pepper flakes
Layer the sweet potato toasts with spinach, tomato, mashed avocado, smoked salmon, eggs, and a squeeze of lemon juice. Enjoy!
