Sweet Potato Toast

Ingredients:

  • 2 lengthwise slices of sweet potato (1 cm thick) 

  • tomato slices

  • 1/3 medium avocado (mashed) 

  • 2 eggs (sunny side up) 

  • 3 slices smoked salmon 

  • 1 handful spinach 

  • Squeeze of fresh lemon 

  • Salt and pepper 

  • Red pepper flakes

  • 1 tbsp olive oil

Directions:

  • Preheat oven to 425°F

  • Slice your sweet potato into thin, lengthwise slices and drizzle with olive oil

  • Place slices on a baking sheet or pyrex dish and bake for about 20 minutes, flipping them over halfway through

  • Turn your stove to medium heat and and add olive oil to a frying pan

  • Cook 2 eggs to your liking and season with salt, pepper, and red pepper flakes

  • Layer the sweet potato toasts with spinach, tomato, mashed avocado, smoked salmon, eggs, and a squeeze of lemon juice. Enjoy!
