Honey Mustard Eggs

Servings: 1

Ingredients:

  • 2 Egg

  • 1 tsp Extra Virgin Olive Oil

  • 1 tsp White Wine Vinegar

  • 1/2 tsp Dijon Mustard

  • 1/2 tsp Honey

  • Sea Salt & Black Pepper (to taste)

Directions:

  • Bring a large pot of water to a boil. Reduce the heat to a simmer and gently place eggs into the water. Set your timer for 10 minutes.

  • Meanwhile, in a small bowl, whisk together the oil, vinegar, honey, salt and pepper.

  • After 10 minutes, use a spoon to lift the eggs out of the water. Place in an ice cold water bath for five minutes to stop the eggs from cooking further. Peel and set aside.

  • Slice the eggs in half and divide onto plates. Drizzle with the honey mustard dressing. Enjoy!
