Cobb Salad

Ingredients:

  • 1 medium boiled egg 

  • 1/2 Buffalo Chicken Breast

  • 2 strips of side bacon

  • 1/2 ripe vine tomato (chopped)

  • 1/3 avocado (sliced)

  • 2 tbsp chives 

  • 2 tbsp blue cheese (crumbled)

  • 1 cup spinach 

  • 3 hearts romaine

  • Red Wine Vinaigrette

Red Wine Vinaigrette:

  • 3 tbsp red wine vinegar

  • 1 tbsp olive oil

  • 1 tbsp honey

  • 1 tsp dijon mustard

  • .5 tsp garlic powder

Directions:

  • Preheat your oven to 400°. Season your chicken breast with salt on all sides, and brush with hot sauce + vinegar mixture. Bake in the oven for 16-22 minutes until completely cooked all the way through.

  • While the chicken is baking, cook you strips of bacon in a frying pan on medium heat and boil your egg.

  • Chop your ingredients and build your salad, layering greens with egg, chicken, bacon, tomato, avocado, and blue cheese.

  • To make your dressing, whisk together red wine vinegar, olive oil, honey, dijon and garlic and drizzle onto your salad.
