Shrimp Rice with Creamy Dill Sauce

Servings: 2

Ingredients:

  • 2/3 cup Jasmine Rice (uncooked)

  • 2 cups Shrimp (large, peeled and deveined)

  • 1/4 tsp Sea Salt

  • 2 tsp Avocado Oil

  • 3 tbsp Mayo

  • 1/2 Lime (juiced)

  • 2 tsp Fresh Dill (finely chopped)

  • 1/2 Avocado (cubed)

Directions:

  • Cook the rice according to package directions.

  • Meanwhile, place the shrimp on a plate lined with paper towel and pat dry. Season with salt.

  • Warm the oil in a skillet over medium heat. Once warmed, add the shrimp and cook for two to three minutes per side, until pink and cooked through. Remove and set aside.

  • In a small bowl, mix together the mayonnaise, lime juice, and dill.

  • Divide the rice into bowls and top with shrimp and avocado. Serve with the dill sauce on the side. Enjoy!
