Shrimp Black Bean & Corn Salad with Chips

Servings: 4

Ingredients:

  • 1 1/2 cups Black Beans (cooked)

  • 1 1/2 cup Corn

  • 1 lb Shrimp, Cooked (chopped)

  • 1/2 tsp Cumin

  • 1 tbsp garlic (minced or swap for powder)

  • 1/4 cup Extra Virgin Olive Oil

  • 1 lime (juiced)

  • Salt & Pepper

  • 1 Avocado (medium, cubed)

  • 2 cups Cabbage (finely chopped)

  • 5 cups Corn Tortilla Chips

    Directions:

  • In a large bowl combine the beans, corn, shrimp, cabbage, cumin, oil, and lime juice. Season with salt and pepper and toss to combine.

  • Mix in the avocado after the rest

  • .Serve with tortilla chips and enjoy!
