Steak Taco Salad

Ingredients:

  • 1 1/2 tsp Extra Virgin Olive Oil

  • 8 oz Sirloin Steak (or any other lean cut)

  • 1 tbsp Taco Seasoning

  • 1/3 cup Radishes (thinly sliced)

  • 1/3 cup Red Onion (sliced)

  • 1 Avocado (medium, chopped)

  • Romaine leaves (chopped)

  • 1 cup Corn Tortilla Chips (crushed)

  • 1/4 cup Feta Cheese (crumbled)

  • 1/4 cup light Sour Cream (can also use DF version or greek yogurt)

  • Cilantro (fresh or dried)

  • 1/4 cup Salsa or Pico

    Directions:

  • Heat the oil in a pan over medium-high heat. Season both sides of the steak with the taco seasoning.

  • Add the steak to the pan and cook for about two to three minutes per side, or until it has reached your desired doneness. Remove the steak from the pan and set it on a cutting board for five minutes. Slice against the grain into strips.

  • Divide the remaining ingredients evenly between plates or bowls. Top with steak slices and enjoy!
