Vegan Medi Bowl

Ingredients:

  • Handful of kalamata olives 

  • 1/2 medium cucumber 

  • 2 handfuls spinach 

  • 6 cherry tomatoes (halved) 

  • 1 tsp garlic (minced) 

  • 1/3 avocado (sliced) 

  • 1/3 cup chickpeas (rinsed & drained) 

  • 1/3 cup edamame (shelled) 

  • 2 tbsp dairy-free plain greek yogurt or DF sour cream

  • Fresh basil 

  • Sea salt 

  • Juice from 1 whole lemon 

  • 1 tbsp olive oil

Directions:

  • Put olive oil in a pan on medium heat. Grill spinach, garlic, chickpeas & tomatoes for about 3-5 minutes depending on how done you want them.

  • Throw all your ingredients in a bowl and top with lemon juice, sea salt, and dairy free greek yogurt!
