Ceviche Tostadas

Ingredients:
6 Corn Tortilla (small)
200g or approx 20 medium Shrimp (cooked & chopped)
1 Tomato (diced)
1 medium Avocado (diced)
2 1/2 tbsp Cilantro (finely chopped, really use as much as you want)
3 tbsp Lime Juice
1/2 tsp Sea Salt
1/3 Red Onion (finely chopped)
1 ripe Mango (cut into small cubes)
Directions:
Preheat the oven to 400ºF and prepare a baking sheet.
Add the tortillas to the baking sheet and cook in the oven for five to six minutes or until toasted. Remove and set aside.
Meanwhile, in a bowl, mix together the remaining ingredients. Adjust the seasoning to your taste, wrap the bowl with a cover or plastic wrap, and set aside in the fridge for 15 minutes.
Top the toasted tortillas with shrimp ceviche and enjoy!
