Ceviche Tostadas

Ingredients:

  • 6 Corn Tortilla (small)

  • 200g or approx 20 medium Shrimp (cooked & chopped)

  • 1 Tomato (diced)

  • 1 medium Avocado (diced)

  • 2 1/2 tbsp Cilantro (finely chopped, really use as much as you want)

  • 3 tbsp Lime Juice

  • 1/2 tsp Sea Salt

  • 1/3 Red Onion (finely chopped)

  • 1 ripe Mango (cut into small cubes)

Directions:

  • Preheat the oven to 400ºF and prepare a baking sheet.

  • Add the tortillas to the baking sheet and cook in the oven for five to six minutes or until toasted. Remove and set aside.

  • Meanwhile, in a bowl, mix together the remaining ingredients. Adjust the seasoning to your taste, wrap the bowl with a cover or plastic wrap, and set aside in the fridge for 15 minutes.

  • Top the toasted tortillas with shrimp ceviche and enjoy!
