Beef Stir Fry
Servings: 2
Ingredients:
1 large flank steak or round steak (about 6oz)
2 tbsp olive oil
4 cups mixed veggies (fresh or frozen)
1 package instant ramen noodles (with seasoning)
1 tbsp toasted sesame seeds (optional)
Sauce:
1 tsp garlic
1 tsp ginger
1/3 cup broth (can use chicken, veg, or beef)
3 tbsp low sodium soy sauce
2 tbsp brown sugar
1 tbsp cornstarch
1 tsp sesame seed oil
1 tsp rice vinegar (swap with white wine vinegar or apple cider vinegar if you don’t have)
Directions:
In a large pot of boiling water, cook ramen noodles until they are soft (about 3-4 minutes), rinse with cold water and drain. Toss with soup seasoning (that comes with the ramen noodles) and set aside
In a medium sized bowl, mix your Stir Fry Sauce and set aside
Slice your steak into thin strips and throw them into the Stir Fry Sauce to marinade
Turn your stove to medium heat and add olive oil to a large pan or wok
While the pan is heating up, chop your veggies into small bite sized pieces
Throw your veggies into the pan and cook them for about 5-8 minutes until they begin to soften
Throw your steak slices and remaining Stir Fry Sauce into the pan with the veggies and cook until just before the steak reaches your desired level of doneness
2 minutes before the steak is ready, throw the noodles into the pan and mix them around so they are evenly coated in the mixture
Serve in bowls and garnish with sesame seeds. Enjoy!
