Beef Stir Fry

Servings: 2

Ingredients:

  • 1 large flank steak or round steak (about 6oz)

  • 2 tbsp olive oil

  • 4 cups mixed veggies (fresh or frozen)

  • 1 package instant ramen noodles (with seasoning)

  • 1 tbsp toasted sesame seeds (optional)

Sauce:

  • 1 tsp garlic

  • 1 tsp ginger

  • 1/3 cup broth (can use chicken, veg, or beef)

  • 3 tbsp low sodium soy sauce

  • 2 tbsp brown sugar

  • 1 tbsp cornstarch

  • 1 tsp sesame seed oil

  • 1 tsp rice vinegar (swap with white wine vinegar or apple cider vinegar if you don’t have)

Directions:

  • In a large pot of boiling water, cook ramen noodles until they are soft (about 3-4 minutes), rinse with cold water and drain. Toss with soup seasoning (that comes with the ramen noodles) and set aside

  • In a medium sized bowl, mix your Stir Fry Sauce and set aside

  • Slice your steak into thin strips and throw them into the Stir Fry Sauce to marinade

  • Turn your stove to medium heat and add olive oil to a large pan or wok

  • While the pan is heating up, chop your veggies into small bite sized pieces

  • Throw your veggies into the pan and cook them for about 5-8 minutes until they begin to soften

  • Throw your steak slices and remaining Stir Fry Sauce into the pan with the veggies and cook until just before the steak reaches your desired level of doneness 

  • 2 minutes before the steak is ready, throw the noodles into the pan and mix them around so they are evenly coated in the mixture

  • Serve in bowls and garnish with sesame seeds. Enjoy!
