One Dish Sausage & Veg

Ingredients:

  • 1 package turkey or chicken sausage (approx 400g) (swap for Beyond Meat Sausage)

  • Approx 6 cups whatever veg you have and are in the mood for! This is such a good way to use up whatever is in the house.

  • Recommended veggies: potatoes, tomatoes, zucchini, bell peppers, onion (seriously, whatever you have will work great)

  • 3 tbsp olive oil

  • 1 tsp garlic

  • 1 tsp paprika

  • 1 tsp oregano or thyme

  • Salt and pepper

  • Parmesan cheese to sprinkle on top (about ⅓ cup)

Directions:

  • Preheat the oven to 400°F

  • Chop up all your veggies into bite size pieces and arrange in a single layer on a parchment paper lined baking sheet

  • Slice sausages and mix them evenly into your veggie mixture

  • Toss everything in olive oil, making sure it’s evenly coated

  • Season well and throw into the oven for 20 minutes

  • Flip everything over, season more and then place your baking sheet back in the oven for another 15 minutes

  • Remove from the oven, sprinkle with parmesan cheese, and serve!
