One Dish Sausage & Veg

Ingredients:
1 package turkey or chicken sausage (approx 400g) (swap for Beyond Meat Sausage)
Approx 6 cups whatever veg you have and are in the mood for! This is such a good way to use up whatever is in the house.
Recommended veggies: potatoes, tomatoes, zucchini, bell peppers, onion (seriously, whatever you have will work great)
3 tbsp olive oil
1 tsp garlic
1 tsp paprika
1 tsp oregano or thyme
Salt and pepper
Parmesan cheese to sprinkle on top (about ⅓ cup)

Directions:
Preheat the oven to 400°F
Chop up all your veggies into bite size pieces and arrange in a single layer on a parchment paper lined baking sheet
Slice sausages and mix them evenly into your veggie mixture
Toss everything in olive oil, making sure it’s evenly coated
Season well and throw into the oven for 20 minutes
Flip everything over, season more and then place your baking sheet back in the oven for another 15 minutes
Remove from the oven, sprinkle with parmesan cheese, and serve!
