Eggs Royale

Ingredients:
4 Eggs
2 extra Egg Yolks
1 1/2 tsp Lemon Juice
1/4 tsp Sea Salt
1/4 cup Butter or DF Butter (melted, hot)
4 slices Smoked Salmon
1 Bagel (sliced in half, toasted)
Handful Spinach
Sliced Tomatoes (optional)
Directions:
Bring a pot of water to a boil. Once boiling, reduce the heat slightly and add the eggs. Cook for 6.5 minutes for a soft-boiled egg. Once the egg is done, add to a bowl of ice water and set aside.
Meanwhile, in a blender add the egg yolks, lemon juice, and sea salt. Blend for a few seconds or until combined.
With the blender running on medium-high, slowly add the hot butter to the mixture until it's thick and emulsified.
Divide the smoked salmon between bagels. Layer spinach and tomatoes on top. Peel the eggs and place on top of the smoked salmon. Spoon the hollandaise sauce on top and enjoy!
