Ultimate Veg Omelette

Ingredients:
2 whole eggs + 2 egg whites
Tiny splash of your favourite milk
Salt & pepper
Any spices or seasonings you like
1 big handful spinach (chopped)
1/2 red bell pepper (chopped)
4 large mushrooms (thinly sliced)
1/3 cup yellow onion (chopped)
4 stems asparagus
1 tsp garlic (minced)
1 tbsp olive oil
Toppings:
1/3 avocado (sliced)
2 tbsp goat cheese (optional if you want to make recipe dairy-free)
Directions:
Turn your stove to medium heat and add olive oil to a large frying pan
Chop all your veggies and add them all to the pan (except for spinach) with garlic and seasoning. Cook for about 7 - 10 minutes depending on how well done you like them
Add spinach to the mixture for the final 60 seconds and then remove all veggies from the pan
Whisk eggs, milk, and more seasoning in a small bowl with a small whisk or a fork
Pour your eggs into the pan and allow them to cook on low heat
Once the bottom begins to set, layer your veggies on top and cover your pan with a sealed lid for about 1 minute.
Loosen the bottom of the omelette with your spatula and flip it over to grill the other side for about 30 - 60 more seconds
Place avocado and goat cheese on top and enjoy!
