Ultimate Veg Omelette

Servings: 1

Ingredients:

  • 2 whole eggs + 2 egg whites

  • Tiny splash of your favourite milk

  • Salt & pepper 

  • Any spices or seasonings you like

  • 1 big handful spinach (chopped)

  • 1/2 red bell pepper (chopped) 

  • 4 large mushrooms (thinly sliced) 

  • 1/3 cup yellow onion (chopped) 

  • 4 stems asparagus 

  • 1 tsp garlic (minced) 

  • 1 tbsp olive oil

Toppings:

  • 1/3 avocado (sliced)

  • 2 tbsp goat cheese (optional if you want to make recipe dairy-free)

Directions:

  • Turn your stove to medium heat and add olive oil to a large frying pan

  • Chop all your veggies and add them all to the pan (except for spinach) with garlic and seasoning. Cook for about 7 - 10 minutes depending on how well done you like them

  • Add spinach to the mixture for the final 60 seconds and then remove all veggies from the pan

  • Whisk eggs, milk, and more seasoning in a small bowl with a small whisk or a fork

  • Pour your eggs into the pan and allow them to cook on low heat

  • Once the bottom begins to set, layer your veggies on top and cover your pan with a sealed lid for about 1 minute.

  • Loosen the bottom of the omelette with your spatula and flip it over to grill the other side for about 30 - 60 more seconds

  • Place avocado and goat cheese on top and enjoy!
