Apply & Almond Oat Crumble

Ingredients:

  • 4 Apples (medium, peeled, cored, chopped)

  • 2 tbsp Lemon Juice

  • 1 tsp Cinnamon

  • 1/4 cup Sweetener of choice

  • 1/4 cup Butter or DF alternative (cold)

  • 1/2 cup Almond Flour

  • 1/4 cup Almonds (finely chopped)

  • 1/2 cup Oats

  • 3 cups Plain or Vanilla Greek Yogurt

  • 2 scoops of Vanilla Protein Powder

Directions:

  • Preheat the oven to 400ºF

  • Add the apples, cinnamon, lemon juice, and 1/4 of the sweetener to a saucepan over medium heat. Cover and cook for five minutes, or until the apples have softened. Remove from the heat and set aside to cool.

  • Meanwhile, place the butter in a mixing bowl with the almond flour, almonds, oats, and the remaining sweetener. Rub together with your fingertips until roughly combined.

  • Transfer the apples to a baking dish and drop chunks of the oat mixture over the apples. Bake in the oven for 25 to 30 minutes, or until golden and bubbling.

  • Divide the yogurt into bowls or tupperware and whisk with vanilla protein until smooth. Top with the apple crumble and enjoy!
