Protein Power Batter
Servings: 1
Ingredients:
1 egg
1/2 serving vanilla whey isolate protein OR vegan vanilla protein
1/2 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/3 cup of either: cottage cheese, plain greek yogurt, dairy-free yogurt, or apple sauce
1/2 banana
4 tbsp coconut flour
1 tbsp coconut oil or cooking spray
Cream Cheese Filling:
1/2 cup fresh or frozen blueberries
1/4 cup fat free or light cream cheese
1/4 cup greek yogurt
1 tsp vanilla extract
2 tbsp powdered stevia (use regular if you don’t have)
Directions:
Add all ingredients to your blender or food processor and blend until completely smooth and free of lumps
For Pancakes: Turn stove to medium-low heat and spray a frying pan or add coconut oil. Pour the batter on the pan and cook pancakes on one side until there are lots of bubbles poking through. Flip pancakes and cook until they are golden brown
For Waffles: Spray both sides of a waffle iron with coconut oil spray or use a spatula to spread coconut oil. Pour the batter into the iron and cook until both sides are golden brown and waffles have been cooked all the way through. They should be able to be pulled off the waffle iron easily
