Chicken Sausage Penne

Servings: 4

Ingredients:

  • 1 package chicken sausage (approx 400g)

  • 1 tbsp olive oil

  • 5 cups penne (cooked)

  • 2 cups cherry tomatoes (halved)

  • 2 tbsp garlic (minced)

  • 1 medium yellow onion

  • 2 cups mushrooms (sliced)

  • 1 medium zucchini (sliced)

  • 1 can fire roasted tomatoes

  • ½ cup parmesan cheese

  • 1 tsp oregano

  • 1 tsp basil (or fresh if you have!)

  • Salt and pepper

Directions:

  • Bring a large pot of water to a rolling boil on high heat

  • Add a pinch of salt, and then add penne noodles. Cook at a boil until the pasta is soft but not mushy (about 10-12 minutes)

  • While your pasta is cooking, chop sausages, tomatoes, onion, mushroom, and zucchini into small bite sized pieces. 

  • Turn your stove to medium heat and add olive oil to a large frying pan. Add your chopped vegetables, sausages, and garlic. Stir regularly and cook for about 10 minutes

  • Turn the heat down to low and add your fire roasted tomatoes and juice in the can, allowing the mixture to simmer for another 10 minutes. Season with oregano, basil, salt and pepper

  • Just before it’s ready, stir in the parmesan cheese and cooked penne, coating everything evenly and making sure the penne is hot (about 2 minutes before removing from heat)

  • Allow to cool and serve in bowls!
