One Pan Mediterranean Shrimp Orzo

Ingredients:
1 tbsp Extra Virgin Olive Oil
1 large Red Onion (chopped)
2 tbsp Greek Seasoning
1 & 1/2 cups Orzo (dry)
2 & 1/2 cups Water
2 cups Cherry Tomatoes (halved)
2 cups your favourite type of Olives (pitted, halved)
2 lbs / 800g Shrimp (peeled, deveined)
1 bunch Parsley (chopped)
1/3 cup Feta Cheese (crumbled)
1 & 1/2 cups Garlic Pasta Sauce
Directions:
Heat the oil in a large non-stick pot or deep pan over medium heat. Add the onion and Greek seasoning and sauté for two to three minutes. Add the orzo, water, pasta sauce, cherry tomatoes, and olives. Stir to combine.
Cover with a lid, turn the heat to low, and simmer for about 15 minutes or until the water has absorbed and the orzo is almost cooked through.
Add the shrimp, stir well, and cover the pan with a lid. Cook for another five minutes or until the shrimp is cooked through. Top the orzo with parsley and feta cheese. Enjoy!
