Shrimp BLT

Ingredients:
2 slices cooked Bacon (halved)
3/4 cup Shrimp, Cooked (small shrimp)
1 tbsp light Mayo
1 tsp Dijon Mustard
1 tbsp Chives
2 slices Whole Grain Bread (lightly toasted)
1/2 Tomato (medium, sliced)
1/2 cup Mixed Greens
Directions:
Cook the bacon in a pan over medium heat for five minutes per side or until desired crispiness.
Meanwhile, combine the cooked shrimp, mayonnaise, mustard, and chives in a bowl. Divide the mixture evenly between the slices of bread.
Add the tomato slices and bacon. Top the greens. Close the sandwich and enjoy!
