Shrimp BLT

Ingredients:

  • 2 slices cooked Bacon (halved)

  • 3/4 cup Shrimp, Cooked (small shrimp)

  • 1 tbsp light Mayo

  • 1 tsp Dijon Mustard

  • 1 tbsp Chives

  • 2 slices Whole Grain Bread (lightly toasted)

  • 1/2 Tomato (medium, sliced)

  • 1/2 cup Mixed Greens

Directions:

  • Cook the bacon in a pan over medium heat for five minutes per side or until desired crispiness.

  • Meanwhile, combine the cooked shrimp, mayonnaise, mustard, and chives in a bowl. Divide the mixture evenly between the slices of bread.

  • Add the tomato slices and bacon. Top the greens. Close the sandwich and enjoy!
