Chicken Salad on Apple Slices

Ingredients
1 large or 2 small Chicken Breasts, Cooked (shredded)
2 stalks Celery (finely chopped)
1/4 cup Red Onion (finely chopped)
1/4 cup Plain Greek Yogurt
3 tbsp Light Mayo
1 tsp Dijon Mustard
1 tbsp Parsley (finely chopped or dried)
1 tsp Garlic Powder
1/2 Lemon (juiced, zested)
Sea Salt & Pepper
2 Apples (large, cored, cut into thin slices)
Directions:
In a medium-sized bowl, add the chicken, celery, onion, yogurt, mayo, garlic, dijon, parsley, lemon juice, lemon zest, salt, and pepper. Mix well to incorporate.
Divide onto the apple slices and enjoy!
