Chicken Salad on Apple Slices

Ingredients

  • 1 large or 2 small Chicken Breasts, Cooked (shredded)

  • 2 stalks Celery (finely chopped)

  • 1/4 cup Red Onion (finely chopped)

  • 1/4 cup Plain Greek Yogurt

  • 3 tbsp Light Mayo

  • 1 tsp Dijon Mustard

  • 1 tbsp Parsley (finely chopped or dried)

  • 1 tsp Garlic Powder

  • 1/2 Lemon (juiced, zested)

  • Sea Salt & Pepper

  • 2 Apples (large, cored, cut into thin slices)

Directions:

  • In a medium-sized bowl, add the chicken, celery, onion, yogurt, mayo, garlic, dijon, parsley, lemon juice, lemon zest, salt, and pepper. Mix well to incorporate.

  • Divide onto the apple slices and enjoy!
