Chicken Salad

Ingredients:

  • 2 1/2 oz Chicken Breast (cooked & shredded)

  • 1 stalk Celery (finely chopped)

  • 2 tbsp Red Onion (finely chopped)

  • 1 tbsp Parsley (finely chopped)

  • 2 tbsp Plain Greek Yogurt

  • Lemon wedge (juiced, zested)

  • Salt & Pepper

  • 2 slices Light Rye Crisp Bread OR 1 piece of your fave Toast

Directions:

  • In a medium-sized bowl, add the chicken, celery, onion, parsley, Greek yogurt, lemon juice, zest, salt, and pepper. Mix well to incorporate.

  • Spread the chicken mixture evenly over each crisp bread. Enjoy!
