Chicken Salad

Ingredients:
2 1/2 oz Chicken Breast (cooked & shredded)
1 stalk Celery (finely chopped)
2 tbsp Red Onion (finely chopped)
1 tbsp Parsley (finely chopped)
2 tbsp Plain Greek Yogurt
Lemon wedge (juiced, zested)
Salt & Pepper
2 slices Light Rye Crisp Bread OR 1 piece of your fave Toast
Directions:
In a medium-sized bowl, add the chicken, celery, onion, parsley, Greek yogurt, lemon juice, zest, salt, and pepper. Mix well to incorporate.
Spread the chicken mixture evenly over each crisp bread. Enjoy!
