Ingredients:
Handful kalamata olives
1/2 medium cucumber (chopped)
2 handfuls spinach
8 cherry tomatoes (halved)
1 tsp garlic (minced)
2 eggs (poached)
1/3 avocado (sliced)
2 tbsp hummus
2 tbsp tzatziki
Fresh basil
Sea salt
Squeeze of fresh lemon juice
1 tbsp olive oil
Directions:
Put olive oil in a pan on medium heat. Grill spinach, garlic & tomatoes for about 3-5 minutes depending on how done you want them.
Poach eggs or fry for them for an easier option.
Throw all your ingredients in a bowl and top with lemon juice, sea salt, and dairy free greek yogurt!
