Mediterranean Bowl

Ingredients:

  • Handful kalamata olives 

  • 1/2 medium cucumber (chopped)

  • 2 handfuls spinach 

  • 8 cherry tomatoes (halved) 

  • 1 tsp garlic (minced) 

  • 2 eggs (poached) 

  • 1/3 avocado (sliced) 

  • 2 tbsp hummus

  • 2 tbsp tzatziki 

  • Fresh basil 

  • Sea salt 

  • Squeeze of fresh lemon juice 

  • 1 tbsp olive oil

Directions:

  • Put olive oil in a pan on medium heat. Grill spinach, garlic & tomatoes for about 3-5 minutes depending on how done you want them.

    Poach eggs or fry for them for an easier option.

    Throw all your ingredients in a bowl and top with lemon juice, sea salt, and dairy free greek yogurt!
