Tuna Rice Cucumber Bowl

Ingredients:

  • 2/3 cup Jasmine Rice (dry, uncooked)

  • 2 tbsp light Mayo

  • 1/2 Lemon (juiced)

  • Sea Salt (to taste)

  • 1 can Tuna (drained)

  • 2 tbsp Soya Sauce

  • 1/2 Cucumber (medium, sliced)

  • 1 avocado (thinly sliced)

Directions:

  • Cook the rice according to package instructions.

  • In a bowl, mix together the mayonnaise, soya sauce, and lemon juice. Season with salt. Add the tuna to the bowl and mix well.

  • Divide the cooked rice, tuna mixture, and cucumber slices between bowls and enjoy!
