Vegan Po Boy

Ingredients:
1/2 cup Unbleached All Purpose Flour
1 1/2 tsp Cajun Seasoning (divided)
2/3 cup Unsweetened Almond Milk
8 slices Tempeh Bacon
1 cup Bread Crumbs
1 2/3 cup Hearts Of Palm (drained, sliced 1/2 inch thick)
3/4 cup Vegan Mayonnaise
1 tbsp Dijon Mustard
4 Whole Wheat Buns
1 head Iceberg Lettuce (small, chopped)
2 Tomatoes (medium, sliced)
Directions:
Preheat oven to 450ºF (230ºC) and line a baking sheet with parchment paper.
Combine the flour with 2/3 of the Cajun seasoning on a shallow plate. Place the milk in a second shallow plate, and the bread crumbs in a third one.
Drop a hearts of palm piece into the flour mixture, then into the milk, and then into the bread crumbs to coat completely. Place on the prepared baking sheet. Repeat for each piece.
Bake for 12 to 15 minutes or until browned and crispy.
Cook Tempeh Bacon in a pan on the stove until crispy
Meanwhile, mix the mayonnaise, mustard, and remaining Cajun seasoning in a small bowl. Set aside.
Spread the Cajun mayonnaise onto the bread. Top with lettuce, tomatoes, and crispy hearts of palm. Enjoy!
